The “Mifa” oven-baked bread emerges hot and delicious from ovens made of earth clay, baking the earth’s bounties of wheat, corn, and barley. The dark brown “Areekah” is prepared, mirroring the color of its mountain wheat, with honey extracted from its fields and ghee from its livestock. “Tasabea,” “Mashgoutha,” and “Mabhutha” are cooked in fresh milk from the thriving livestock in its plains, blended seamlessly with a mixture of wheat, honey, and ghee. Fresh meat is cooked deep in pits skillfully dug and lit by the Aseeri man, acquiring its flavor from the natural plants of the earth.
