Mathriyah, a cherished dish in Aseer, stands out for its simplicity and accessibility of ingredients, making it a household staple.
The dish is prepared from barley flour and water. Water is brought to a boil with salt, then flour is sprinkled with a bit of water and rubbed into small, sand-like clumps. These clumps are added gradually to the boiling water, stirred thoroughly until the mixture thickens and cooks for about ten to fifteen minutes before being served in a large dish.
Mathriyah is enhanced with ghee, Radheefa, and honey, often garnished with dates around the edges, providing warmth and high caloric content, ideal for winter days.
Popular particularly in eastern Aseer, in regions like Bisha and Tathleeth, the dish is celebrated for incorporating the finest local ghee and honey, derived from the area's livestock and trees.
